Double chocolate parfait

Parfait is a dessert. Not actually an ice cream. It is sweet with fats but delicious and always fashion, all seasons.. There are several ways to make a parfait. Today we will make a special recipe of parfait that you will really enjoy to make, not a difficult one in fact.
Preparation 40 minutes
Wait at least 12 hours
Ingredients
Chocolate parfait
100g egg whites
100g caster sugar
200g milk chocolate (in the recipe I use Valrhona Caramelia in the same proportion)
200 g fresh cream with 33-35% fat
For the Vanilla Parfait
Just use the same amounts of ingredients by replacing only milk chocolate with 225g white chocolate and two table spoons of vanilla extract.
For the chocolate topping the recipe is here. The only difference is that I used chocolate Valrhona 66% and coffee liquor instead of syrup.
The following method is for both parfait flavours.
Milk chocolate parfait.
Make a swiss meringue.
Beat the egg whites with sugar in a bain-marie . Once the temperature reaches 57 degrees pour the eggs and sugar in the mixer and beat well until you feel the bucket totally cool.
Melt the chocolate in a bain-marie. Let it cool for a little while.
Beat the fresh cream until it becomes like the soft texture of yogurt. In this step add 1/3 of the whipped cream to the chocolate and mix gently.
Add the meringue spoon by spoon in the chocolate and mix gently with a spatula. Finally add the remaining whipped cream and mix gently as well.
Place in a mold or a dish that you like for your dessert with cling film to cover the whole internal surface and spread the chocolate mixture.
Put in the freezer for an hour.
Proceed in the same way with the vanilla parfait. The only different in the procedure is that you will have to add the vanilla extract to the swiss meringue once ready. Pour the white mixture on top of the milk chocolate one and place in the freezer ideally for one night.
Ideas
Alternatively you could add dry toasted fruits to the white mixture or sugar fruits. Tip over the parfait and decorate with caramelised nuts or almonds as well as with chocolate syrup.
Make the same recipe with bitter chocolate by using 150 g. chocolate 70%. I prefer to make this one for my friends as in this photo.
Also if you love fruits, you could decorate with berries or fresh cherries .
