Frozen black forest

Last year's recipe... full of taste... Once you know how to make homemade ice cream, you can then be creative and prepare even ice cream desserts or cakes.I had the idea to make a black forest frozen dessert, not so difficult to make, it might take a little time to prepare but it is impressive, delicious and very refreshing especially during hot weather.This time ice cream will be an easy recipe without eggs. All you need is your ice cream maker. Otherwise, as I have written in other recipes, you will just have to follow the “routine processing”of refrigerating for many hours, but beating the mixture once every half hour…So maybe it is time for you to just buy an ice cream maker and make your life easier!!

Makes 8 servings

Preparation 1 h ( if you do not have ice cream maker calculate more time)

Waiting 1 night

Ingredients

500 ml fresh full cream

2 tsp vanilla essence

100g caster sugar

A chocolate cake cut into small cubes (about 150 g) (for an aromatic and rich chocolate cake recipe just click here)

100g bitter chocolate chopped into very small pieces

Sweet cherries with syrup (for an easy sweet cherry syrup you will need 200 g pitted fresh cherries , 150 g fine sugar for jam, 3 tablespoons of water. Check below for the recipe)

Chocolate ganache (for the ganache you will need 50 gr bitter chocolate 66% 50 gr full cream, 1 tablespoon p. Cherry liqueur, 1 tablespoon honey)

Trimmings of white and dark chocolate

Prepare the sweet cherry syrup

Place all the ingredients in a saucepan over low heat and by stirring every 5 minutes, boil the mixture for about 20 minutes. The mixture is ready when the syrup carves a path onto a spoon. Allow to cool and preserve in the refrigerator. If you make a large amount to use in your desserts and reserve for a long time you could pour the syrup into sterilized jam jars.

For the ice cream preparation

Put the three ice cream materials (fresh cream, confectioner’s sugar and vanilla extract) for 15 minutes in the freezer. Do not freeze them for more time. Beat the mixture in your ice cream maker, according to the instructions of your machine. Once the mixture is ready, before stopping the ice cream maker, add half the amount of the sweet cherry syrup, the cake pieces and chocolate chips to incorporate them.

If you do not have an ice cream maker, beat the mixture in the mixer until it has the texture of the whipped cream. Place in the freezer for a few hours beating the mixture every half hour.

The last half hour, add at the end the cake pieces, half of the sweet cherry syrup and the chocolate pieces.

In a ball-shaped mould covered with cling film pour the mixture and leave it overnight.

The next day prepare the chocolate sauce.

Boil the cream and pour onto the chopped chocolate. Leave for 1 minute. Mix with a spatula to homogenize until you have a smooth ganache. Then add the liqueur and honey and mix one last time.

Inverse the dessert onto a beautiful dish.

Pour the chocolate sauce over the cake and decorate with the chocolate trimmings and the remaining sweet cherry.

Read very well any recipe.

 

Make sure that you are familiar with all ingredients mentioned in the recipes.

 

Always try a recipe twice. 

 

Don't be afraid to combine different flavours. Results are not always successful but you can learn.

 

Don't be afraid of great chef's recipes. There are sometimes difficult (not always) but with lots of practice the final result is achieved.
