Easy charlotte with fresh fruits

During spring and summer season, we are looking for easy and quick recipes to make. So I was looking for a light and delicious dessert only with a few ingredients and then I made an easy recipe by using not a dish for charlotte but individual little forms that I have at home.

For 4 individual charlotte forms

Preparation 10 '

Wait one hour.

Ingredients

300g mascarpone

2 tbs powdered sugar

200g cream

1g agar

Biscuits ladyfingers

Fresh fruits of your choice

½ tsp fresh vanilla beans

Soften the mascarpone with a fork.

In a bowl mix the agar agar with a few drops of warm water to dissolve..

Beat the mascarpone with the sugar in a mixer and then add the cream. Beat the mixture until you have a thick cream-like whipped cream. Add the agar agar and vanilla beans and mix gently.

Add the fruits chopped and mix again gently. You could use any fruit that you like. In this recipe I added peach, pear and kiwi. Adjust the ladyfingers at the same height as the ramekins, by cutting one of their edge. Keep the cut pieces to use. Don’t throw them away.

Cover with cling film from bottom to top in order to fully cover the surface. Place the ladyfingers one after the other on the sides of the dish. Add two spoons of cream (almost until the middle of the dish) on the bottom. Add a few ladyfingers on the top of the cream and then a few spoonfuls of cream until it reaches almost the top of the dish. Finally cover the top of the dish with the ladyfingers.

Put in the freezer for 1 hour or refrigerate for about 2 hours.

Tip over the charlotte by placing it on a plate and by taking off the cling film. Decorate as you like.

As you see in the pictures I decorated on top with caramel spread and chopped fresh fruits

sprayed with a little lemon. Also you could decorate with melted white chocolate.

In case you wish to add a little syrup to your ladyfingers or warm alcohol, then do. I didn’t

because such biscuits called in France “a la cuillère” are quite soft and fluffy and nicely tie up with the final taste result.

Read very well any recipe.

 

Make sure that you are familiar with all ingredients mentioned in the recipes.

 

Always try a recipe twice. 

 

Don't be afraid to combine different flavours. Results are not always successful but you can learn.

 

Don't be afraid of great chef's recipes. There are sometimes difficult (not always) but with lots of practice the final result is achieved.
