I love citrus fruits. I love eating them but combining them as well with other textures, flavors and ingredients.

I was generally looking for an easy recipe for a juicy cake, being very aromatic and keeping as well its freshness for a few days. I discovered this beautiful recipe from a french blog and I totally recommend it to you. I made only short changes. Check it out!

For 8 persons

Preparation 20'

Baking 45-55' (depending on your oven)

Ingredients

250 gr softened butter in room temperature

250 gr caster sugar +2 tbs

4 medium eggs

250 gr all purposes flour

2 tsps of baking powder

Zest and juice of 4 juicy oranges (in case the oranges have not to much juice increase the quantity to additional 3 oranges)

Preheat the over to 180C degrees C (air)

Beat the butter and the sugar in the mixer until fluffy and whitened.

Without stopping, add the eggs one by one (until well incorporated), then the flour along with the baking powder and at the end the zest and half quantity of the juice.

Use a small 23cm baking pan for the cake. Pour the mixture in the prepared pan (if not silicone don't forget to butter and flour the pan otherwise the cake will stuck) and bake for 45-55 minutes (check with a knife or wooden stick immersed in the middle until the bottom of your cake. If it comes out clean then your cake is ready).

Let the cake cool.

Heat the rest of the juice and the sugar tablespoons in a small saucepan. Prepare a sirup by boiling the mixture for 5 minutes.

Pour the sirup on top of your cake and let it absorb it.

Ready to taste it? Just try it! It's so perfect!
