French way fruit tart

That's what I like! Take original recipes and transform them to a new reality. This is what I have tried to make with this delicious french origin tart. Usually in Alsace, tarts are mostly related to apple recipes. And they do fine. They are delicious! But considering that I was searching to make something original for Valentine's day, I thought that maybe forest fruits like raspberries, blueberries and cassis can assist me in presenting a different result. And I liked it! I loved it! Ideal for spring! Don't miss it. It's not necessary to prepare your own dough if you can't. This tart/dessert is really exciting!

1 Tart for 8 persons

Preparation 10 minutes

Baking around 35 minutes

Ingredients

1 pate brisee (you can find it in the super markets, otherwise check the recipe here)

2 eggs

200 ml of fresh liquid cream

1 sachet of vanilla sugar

2 tbs of brown sugar

150 gr of cassis

200 gr of blueberries

250 gr of raspberries

Optional decoration

50 gr of chocolate caramel flavored

20 gr of fresh liquid cream

Preheat the oven to 180C degrees

Line a 3.5cm-deep, 22cm (base measurement) fluted tart tin (butter the dish if not silicone) with the pastry and trim any excess. Use your fork and cut the surface.

At the same time Whisk the cream, vanilla sugar and eggs in a medium bowl.

Pour the mixture to the tart, on top of the pastry and at the end place the fruits in a way to look pretty.

Bake the tart for 25 minutes. Then take off the oven and spread the brown sugar in the whole surface. Bake for another 10'

Take off the oven and let the tart cool before serving it. If you want, serve it warm as well.

(Optionally)

Heat in a little saucepan the chocolate cut in little chips and the fresh cream until they are well incorporated.

Serve your tart with a spoon of this chocolate sauce.

You can use any fruit that you like. As you see below, I used a heart cutter, cut a little of piece of tart and I have easily made an original Valentine's dessert. Try it with any cutter that you like. It's fun!

Read very well any recipe.

 

Make sure that you are familiar with all ingredients mentioned in the recipes.

 

Always try a recipe twice. 

 

Don't be afraid to combine different flavours. Results are not always successful but you can learn.

 

Don't be afraid of great chef's recipes. There are sometimes difficult (not always) but with lots of practice the final result is achieved.
