Christmas cupcakes with spices

A few months before Christmas I was looking for a cake moist but with sense of spices. I have tested two three different recipes while I realized at the end that combining maple syrup with honey and east spices I have a delicious cake! Well, a cupcake to enjoy with my coffee. Try it with orange buttercream or coffee ganache! It's just perfect.

Put all Christmas spirit in one cupcake and taste the festive flavour! Bake them today. It’s easy to prepare.

Ingredients

120 g maple syrup (maple syrup)

120 g honey

20 g liquid fresh cream

250g self-rising flour

1 tsp ginger powder

2 tsps cinnamon

1/2 tsp nutmeg

1/2 tbsp cocoa powder

1 tsp. instant coffee powder

1 good pinch of salt

Zest of one orange

135 g butter at room temperature

125 g brown sugar

2 eggs (medium sized)

Preheat the oven to 180 degrees

Heat (not boil) the honey, the maple syrup and the fresh cream in a saucepan.

Sift the flour, the spices the coffee powder, the cocoa and the salt in a bowl.

Beat the butter with the sugar in a mixer, until it becomes fluffy and soft enough. Add then the eggs one by one and continue beating the mixture. Then add the orange zest and continue beating.

Finally add alternately the mixture of liquid with the mixture of solid and continue beating to create a well homogenized mixture.

Don’t over beat the mixture. What you need is to well incorporate only all ingredients.

Place cupcake papers that you like in baking cases and pour the mixture within until covering the 2/3 in height. Bake them for approximately 20 minutes (doing the test with the knife, by plunging and seeing if they are cooked)

Frost with buttercream or, even better, meringue buttercream flavoured with orange.

Read very well any recipe.

 

Make sure that you are familiar with all ingredients mentioned in the recipes.

 

Always try a recipe twice. 

 

Don't be afraid to combine different flavours. Results are not always successful but you can learn.

 

Don't be afraid of great chef's recipes. There are sometimes difficult (not always) but with lots of practice the final result is achieved.
